I have a confession to make: I’ve been eating out a lot more lately than I used to. I hit a rut! I got tired of cooking for a little bit. It was terrible.
Part of the problem was that I had gotten used to cooking the same few meals – meals that I was really good at making, and tasted delicious, but left me without any variety. So lately I’ve been scouring the internet and my memory for new ideas, things to make that would be exciting and different. I have tried to make some things that have not turned out well! However, last night I hit on something good.
This is a bright, cheerful rice dish that takes a little time to make, but is totally worth it.

I’ve found I’m most content when I’m making things. Painting, DIY home décor, cooking, whatever. The process of creating something is what keeps me happy. Having something that looks nice at the end is just an added bonus! (Does blogging count as making things? I hope so!)
This past year I’ve made a lot of food and in the process I’ve learned a lot. Cooking and eating healthy doesn’t have to be hard – it just takes a little bit to get the hang of it. After some advice (thanks Chamelle!) I’ve decided it’s time to share some of what I’ve learned over the past year and a half, and my journey as I continue to learn. I hope you will join me!
